Whitesbog Blueberry History


Historic Whitesbog 
We both recently had the pleasure of going on a photography outing to support the New Jersey Pinelands with Richard Lewis, a fine art landscape photographer. After spending a day with him on a fun group photography tour at one of our favorite parts of the NJ Pinelands, Franklin Parker Preserves, I started following Richard on social media. 

Soon after, Richard posted some amazing autumn photographs of sunrise and a red rainbow at a place called Whitesbog. How is it that we've lived in South Jersey all our lives and never visited Whitesbog? Thanks to Richard's post we found our way to Whitesbog with our cameras. The historic 1857 farm and village is located in Browns Mills NJ. Whitesbog is in part of the Brendan T. Byrne state forest.

It was here at Whitesbog that Ms Elizabeth Coleman White showed the world that blueberries could be cultivated. Ms White's very interesting skill set included nursing, agricultural research and hands on experience in both cranberry and blueberry farming.

I was saddened, but not surprised, to read that when Ms White's Father died, in his will, he did not make her President of his company even though she contributed so much to expand the business for their family. The Whitesbog plantation grew from 600 to 3,000 acres.

The legacy of this special area is cared for by the Whitesbog Preservation Trust who is open to the public daily from sunrise to sunset. You can find more information and maps to several walking trails on their website (link below). The landscape is very peaceful and beautiful as you can see from my photos shown. We look forward to visiting again soon!

How do you like my handful of blueberries? Harry took this pic last weekend just before we washed the blueberries and froze them. We always get a case or two from Trinity Church's annual Blueberry Festival in Moorestown, NJ. 


Now is the best time to stock up on blueberries. Fresh blueberries taste great in fruit smoothies and add nutrients to so many recipes. This morning we enjoyed Harry's homemade, gluten-free blueberry pancakes for breakfast!

Blueberry season began June 15th and continues through August 15th. Be sure to pick up your Jersey Blues and enjoy. Blueberries provide a good source of Vitamin C and many other healthful nutrients.

Blueberry Nutrition: 2 ounces: 32 calories, 1.4g dietary fiber (6% DV), 5.4 mg Vitamin C (10% DV), 8.2g carbohydrates, 43 mg potassium (2% DV), plus other nutrients!

Homemade Blueberry Vinaigrette #GardenCuizine

Blueberry Vinaigrette
The inspiration for this recipe came from going to Trinity Church's annual blueberry festival to stock up on fresh blueberries. We buy several cases, rinse the berries, let them air dry, then freeze the blueberries in single layers on cookie trays. Once frozen the berries are easily stored in baggies until ready to use in recipes. 

While at the blueberry festival, we usually get a bite to eat. The food is what you typically find at outdoor summer festivals: drinks, plenty of ice cream, desserts, water and hotdogs. I thought, wouldn't it be nice to have a refreshing tossed salad featuring blueberries and blueberry vinaigrette?
Yields: 2 cups (16oz.) dressing
Ingredients
1 1/2 cups Blueberries 
1/3 cup olive oil + 1/3 cup canola oil OR 2/3 cup Smart Balance oil blend
1 tablespoon (T) rice vinegar (can also use apple cider or red wine vinegar)
1 T balsamic vinegar
2 T Agave or Honey
2 teaspoons (tsp) coarse ground mustard 
2 tsp fresh squeezed lime juice
1/4 tsp minced or grated ginger
1/8 tsp salt 
1/4 cup orange juice
1/4 cup water (or more if necessary to thin as desired)

Putting it all together
  • Rinse blueberries and remove any stems.
  • Add all ingredients to blender and mix.
  • Pour into washed and sanitized dressing bottle or cruet.
  • Enjoy blueberry vinaigrette on tossed garden salad topped with additional fresh blueberries.

Puff Pastry Pinwheels topped with low fat frozen yogurt and Jersey fresh blueberries #GardenCuizine

Puff Pastry Pinwheels
topped with your favorite low fat frozen yogurt or ice cream 
and Jersey Fresh Blueberries

Recipe yields 18 pinwheels

Ingredients
1 box frozen puff pastry dough 
1 egg mixed with splash water for egg wash
large chocolate chips (I used Ghiradelli 60% cacao)
colored sugar crystals (optional)
low fat frozen yogurt or ice cream
Jersey fresh blueberries

cookie sheets lined with foil and lightly sprayed with nonstick spray
preheat oven to 375° F
Putting it all together
This recipe is a fun and easy one. I just made a large batch of puff pastry pinwheels for Trinity Episcopal Church's blueberry festival that is being held tonight. Puff pastry pinwheels are fun served at summer BBQ's and picnics too.

Simply buy puff pastry dough and thaw at room temperature until workable. Depending on the temperature of your kitchen, this could take 15 to 30 minutes. You could also thaw the dough in the refrigerator overnight. Store-bought puff pastry dough is folded like a letter in 3 parts. 
  • Unfold the dough and cut the dough into thirds along the fold. 
  • Cut each rectangle into 3-inch squares.
  • using a paring knife, make a diagonal cut from near the center to the corner. Leave an inch or slightly less in the center uncut
  • fold the tips towards the center to form a pinwheel. Egg wash to hold and egg wash exposed dough
  • sprinkle with colored sugar crystals if desired
  • place a large chocolate chip in the center
  • when your cookie sheet is full, bake until golden
  • continue until all your squares are made into pinwheels.
  • Serve topped with your favorite low fat frozen yogurt or ice cream and a generous portion of Jersey fresh blueberries!

#Recipe Jersey Blueberry whole grain Oat Bars #GardenCuizine

Jersey Blues and whole grain Oats


Usually for Mom's Birthday I bake her favorite - Key Lime Pie. This June was a special birthday for Mom and I opted for something different for her 80th birthday,  I decided on nutrient dense, seasonal Blueberry Bars. 


Last night we visited our local church's blueberry festival to pick up fresh Jersey blueberries for Mom's Blueberry Bar birthday 'cake'. Upon our arrival we found out the blueberries were so popular that they sold out!!! Thankfully, one of the planners found 3 last containers of fresh berries, which was all we needed for one 10 x 15 baking dish full of antioxidant-rich Blueberries sandwiched between cholesterol reducing whole grain oats.

Like many people (both old and young), Mom has to watch her cholesterol. Additional Plant Stanols, along with a healthy diet high in fruits and vegetables, is good heart disease prevention. Plant sterols and stanols are naturally occurring compounds found in fruits and vegetables. 

Plant Stanols and sterols have been scientifically proven to help reduce cholesterol. They have also been shown to be effective for those experiencing side effects from cholesterol lowering medications and can be consumed in combination with statin drugs.

In addition to the rolled oats and blueberries, for even more heart-healthy, cholesterol reducing benefits - rather than using butter with saturated animal fat - I opted to use margarine specifically labeled made with, "Plant Stanols or Sterols."  

The American Dietetic Association recommends eating stanol-enriched foods 2-3 times per day to provide 2-3 grams per day of plant stanols as part of a heart (cardio)-protective diet*. A mere 1.5-1.8 grams per day of plant stanols can lower cholesterol absorption by 30-40%; and 2.2 grams per day, can lower cholesterol absorption by as much as 60%. [1] 

Several margarine's contain plant stanols/sterols. For example, Smart Balance Heart Right Light spread contains 1,700 mg of plant sterols per tablespoon serving (1,000 milligrams = 1 gram).

Mom's party 
Today we celebrated with a few close friends. One of Mom's friends said to her in Italian, "May you live to be 100 (Che tu possa vivere fino a 100 anni)! Mom enjoyed the Blueberry Bars... I hope someone you love will too!

*cardio-protective diet as defined by the American Dietetic Association: total fat intake of 25-35% of daily calories from fat with less than 7% of calories from saturated and trans fats; less than 200mg of dietary cholesterol per day; carbohydrate intake of 50-60% of total daily calories; 25-30 grams of fiber per day; and at least 15% of total calories from protein per day.

In addition, Therapeutic Lifestyle Changes (TLC) recommended by the National Institute of Health's Heart Lung and Blood Institute recommends the above fat and cholesterol restrictions with additional focus on less than 2400 mg of sodium intake daily.

Best Blueberry Bars Recipe
Yields: one 10 x 15 baking dish; 25, 2 x 3-inch servings

Ingredients

vegetable non-stick pan spray

6 cups (888g) Jersey Fresh Blueberries (or frozen)
1 cup (200g) organic Florida Crystals® Sugar (or granulated sugar)
1/2 cup (120ml) Knudsen Pineapple Coconut Juice (or Orange Juice)
2 Tablespoons (22g) Cornstarch

Oat Topping
3 cups (240g) Old Fashioned rolled oats
1 1/2 cup (180g) unbleached white whole wheat flour
1 1/2 cups (330g) packed brown sugar
8 tablespoons margarine with plant stanols (112g) we used (U) kosher Smart Balance® - which is enriched with Omega-3 EPA/DHA and Vitamin E)
Putting it all together
Preheat oven to 350° F (177° C)
  • Lightly spray your baking dish and set aside
  • Combine juice and corn starch and set aside
  • In a medium pot, add the berries and sugar and prepare the filling. Stir over medium heat and stir in cornstarch mixture. Allow to simmer for 15-20 minutes or until juices are clear and bubbly
  • Prepare the topping: In a large bowl combine the remaining ingredients and mix with hands; no need for a mixer (the margarine is real soft and does not have to be melted)
  • Firmly press about half of the oat mixture into the bottom of your prepared baking dish
  • Evenly ladle the cooked filling over the pressed oat layer
  • Sprinkle the remaining oat blend over top and bake for 30 minutes or until the top is golden brown
